Once the salmon has finished …

This broccoli rice casserole is a perfect one dish, one bowl, super quick and easy meal to throw together. Cooked a little longer than the 3 mins/side due to varied thickness of the salmon filets. Thinly slice 4-5 sheets of the roasted seaweed and set aside. Drizzle reserved half of honey mixture evenly over fish. Divide rice mixture among 4 shallow bowls; top evenly with fish.

They are super healthy but also bursting with flavor. The broccoli, the salmon, the hint of Dijon…all of it. Prepare rice according to package directions.

Combine in a small bowl with the rice vinegar, sesame oil, and salt to taste.

When cooking the salmon, I used Whole Foods teriyaki sauce (closest thing to my own recipe and NO high fructose corn syrup).

It’s really very good. Sprinkle with green onions and sesame seeds. Believe it or not, this meal tastes even better than it looks. And that, I love. These Spicy Salmon and Broccoli Quinoa Bowls are probably one of my top five favorite recipes ever. Sauteed the red pepper with very small broccoli florets, then added mushrooms. Most importantly, they are easy to whip up and make awesome leftovers!
